Poached Salmon

Ingredients


  • Salmon
  • Dried minced onion
  • lemon pepper, dill or herb of choice
  • 1/3 cup lemon or lime juice
  • 1/3 cup white wine
  • 1/3 cup water
  • olive oil and butter

    Directions

  • Wash and pat dry salmon. Sprinkle with dried minced onion and other herbs.
  • Put butter and olive oil into heating frying pan
  • When oil/butter is hot, put salmon in "nice" side down to sear the top.
  • Lower the temperature to medium-low and add the lemon/lime juice, wine and water. If the pan starts cooking dry, add more liquid so that salmon is always cooking in about a half-inch of liquid.
  • Cover and cook until almost cooked through.
  • When you can see the salmon is almost cooked through, turn it over to cook from bottom.
  • When done, transfer to plate and pour any liquid left over top.
